蛋白和蛋黄分离。

加入盐和油。
用双手搓成均匀的松散颗粒状。(我一次性手套用完了,所以用筷子拌了拌,对比成品,没有太大的差别)

加入鸡蛋拌匀,翻拌均匀。
团成面团,包起保鲜膜,放在室温下松弛30分钟左右。(团成团即可,不要过度的揉面)
把面团分成每个约20或者25克,揉成团放在烤盘里。(约20克的可以做16个,约25克的可以做12个)
用大拇指在中间按压一下。
点缀上核桃仁。
放入预热好的烤箱150度,上下火烤约15分钟,关火后再焖10分钟即可出炉。

牛奶和黄油隔水融化。
全蛋放入无水无油盆中,加入180克糖。
用打蛋器打发全蛋,将面粉筛入后翻拌均匀。

吉利丁片放入50克清水里,放微波炉里微波30秒取出,坐凉水降温。
待吉利丁片凉至不烫手时,倒入慕斯糊里。
将其拌匀。
用锡纸将模具底下包起。
再将慕斯糊倒入模具中,放冰箱冷藏4小时以上即可脱模食用。
